Tarija is known for growing grapes of full ripeness, that maintain high levels of refreshing acidity, a key ingredient in making sparkling wine. Winemaker Franz Molina combines Spanish Cava grapes Xarel-lo and Parellada with French favorites like Pinot Blanc and Chardonnay to create an elegant and expressive sparkling. The intense mountain sun and cool, fresh evenings allow Molina to make a sparkling with rich character, ripe fruit, and a crisp bite.
This Sparkling White is a wonderful blend of traditional Spanish Cava grapes grown in the Tarija Valley. With 40 percent Xarel-Lo, 40 percent Parellada and 10% Chardonnay, this blend gains new and rounded characteristics only possible at the vineyards’ altitudes of 1850 meters (6000 feet).
